Roasted Seasoned Red Potatoes

The easist side dish for any occasion.

Ingredients:

7 red skinned potatoes
3 tablespoons extra virgin olive oil
3 cloves garlic, finely minced
1/2 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons dried rosemary

Directions:

  1. Preheat oven to 350° F. Cover baking sheet with aluminum foil.
  2. Quarter potatoes with the skin on and place in a medium sized mixing bowl. Add olive oil, salt, pepper, garlic and rosemary and toss in bowl until evenly coated.
  3. Arrange potatoes on a baking sheet.
  4. Place baking sheet in oven and cook for 30-35 minutes, until potatoes browned and tender.
