Lemon-Dill Shrimp

Serves 4 |
A simple recipe with big flavors.
Ingredients:
1 1/2 lb large shrimp, shelled and deveined |
4 teaspoons unsalted butter |
1 teaspoon finely grated lemon zest |
2 tablespoons freshly squeezed lemon juice |
1 tablespoon minced fresh dill |
Kosher salt, to taste |
Ground black pepper, to taste |
Directions:
- Pat shrimp completely dry with a paper towel.
- Heat a large skillet over medium heat. Once hot, place shrimp in skillet and season with salt and pepper, then add 2 teaspoons of butter to the skillet and turn the heat to high. Cook for about two minutes, shrimp should be golden brown on the bottom. Flip shrimp and add remaining butter to skillet, turn off the heat. Let shrimp cook for 1 minute in the residual heat. Add lemon zest, lemon juice and dill to skillet and shake to combine.
- Divide the shrimp among 4 plates and enjoy!
