No Bake Vegan Apple Tart

Serves 1 tart | 
A deliciously healthy fall treat.

Ingredients:

For crust:
1/4 teaspoon sea salt
2 cups walnuts
1/2 cup chopped dates, (soaked and drained)
For Filling:
1 teaspoon ground cinnamon
1 cup chopped dates, (soaked and drained)
3 Granny Smith apples, (peeled and thin sliced)
1/4 teaspoon ground nutmeg
1 1/4 cup apple cider
1/2 teaspoon ground cloves
1/2 tablespoon lemon juice

Directions:

  1. Place walnuts into food processor. Process until it becomes coarse. Add salt and dates. Pulse until mixture is well combined and sticks together.
  2. Press crust into tart pan. Place into freezer while filling is made.
  3. Combine ground cinnamon, apples, ground nutmeg, 1 cup apple cider, ground cloves and lemon juice in a large pan. Bring to a boil on medium heat, then reduce heat and simmer for 10 minutes. Stir ingredients together.
  4. As pan is simmering, pour remaining 1/4 cup apple cider and dates into a blender. Blend until smooth and creamy.
  5. Remove crust from freezer. Spread half the date cream on the crust.
  6. Spread half the apple filling into tart pan. Pour remaining date cream over top of apples. Top with remaining apple filling.
