Pan Seared Corn and Cotija Guacamole

Serves 1 bowl |
A delicious twist on traditional guacamole.
Ingredients:
1/4 cup onion, (finely diced) |
2 avocados, (mashed) |
Salt, (to taste) |
2 tablespoons lime juice |
1 tablespoon butter |
Ground black pepper, (to taste) |
1/4 cup Cotija cheese, (crumbled) |
1 tablespoon cilantro |
1 cup corn |
Directions:
- Place butter in a skillet, heat to medium-high. Once butter is melted, add corn, toss once and let sit. Cook for 6-10 minutes, until corn is charred. Stir corn well and cook an additional 6-10 minutes.
- As corn is cooking, combine onion, avocado, salt, lime juice, pepper, Cotija cheese and cilantro in a mixing bowl.
- Add corn to mixing bowl, stir together and serve.
