Bacon Jalapeno Popper Egg Rolls

Serves 15 | 

Ingredients:

1 cup shredded cheddar cheese
8 oz cream cheese, softened
6 slices bacon, cooked and crumbled
5 jalapeno peppers, finely chopped, seeds removed
15 egg roll wrappers
Vegetable oil, for frying

Directions:

  1. Stir together cheddar and cream cheese in a mixing bowl. Then stir in crumbled bacon and chopped jalapenos. Season everything with salt and pepper. Stir together.
  2. Lay out an eggroll wrapper. Spoon about 2 tablespoons of filling onto the center. Moisten edges with water. Fold the bottom corner over the filling. Then fold in the other sides and roll up tightly. Repeat with the remaining egg roll wrappers.
  3. Pour the vegetable oil into a skillet. Bring to medium-high heat.
  4. Once hot, fry the eggrolls in batches for 2-3 minutes per side, until golden brown and crispy. Transfer to a paper-towel-lined plate. Repeat the process with the remaining egg rolls.
