Garlic Butter Honey BBQ Chicken Tacos





Serves 4 |
Savory, sweet and simply irresistible.
Ingredients:
1 lb boneless, skinless chicken thighs |
2 tablespoons olive oil |
1/2 teaspoon chili powder |
1 teaspoon garlic powder |
1 teaspoon onion powder |
1 teaspoon paprika |
Salt, to taste |
Ground black pepper, to taste |
4 tablespoons unsalted butter |
4 cloves garlic, minced |
1/3 cup BBQ sauce, your choice |
2 tablespoons honey |
1 tablespoon lemon juice |
8 street taco tortillas, flour or corn, warmed |
Shredded cheese, your preference, for garnish |
Shredded lettuce, for garnish |
Directions:
- Place the chicken thighs in a mixing bowl. Pour the olive oil over top and season with chili powder, garlic powder, onion powder, paprika, salt, and black pepper. Toss to coat.
- Bring a skillet to medium-high heat. Place the chicken in the skillet and cook for 5-6 minutes per side, until fully cooked. Remove the chicken from the skillet.
- In the same skillet, melt the butter over medium heat. Add the garlic and saute for 30 seconds. Stir in BBQ sauce, honey, and lemon juice. Simmer for 2 minutes.
- Chop the chicken thighs. Then add to the skillet. Toss until the chicken is evenly coated.
- Spoon the chicken into the tortillas. Garnish with shredded cheese and lettuce.
