Pomegranate Raspberry Chia Dessert

Healthy, sweet and so easy to make.

Ingredients:

For the Base:
1 cup fresh raspberries
1 tablespoon pomegranate juice
1 tablespoon honey
For the Chia Layer:
1 cup unsweetened almond milk
1/4 cup chia seeds
1 tablespoon honey
1/2 teaspoon vanilla extract
For the Toppings:
1/2 cup pomegranate arils
Fresh raspberries

Directions:

  1. Place the raspberries in a small mixing bowl. Pour in the honey and pomegranate juice. Mash together until combined.
  2. Spoon the raspberry mixture into the bottom of serving glasses. Set aside.
  3. In a separate mixing bowl, stir together the almond milk, chia seeds, honey, and vanilla extract. Allow to sit for 15 minutes.
  4. Pour the chia mixture on top of the raspberry mixture. Place the glasses in the refrigerator to chill for at least 2 hours.
  5. When ready to serve, top the chia mixture with fresh pomegranate arils and a few raspberries. Enjoy!
