Brown Butter Spicy Miso Pasta

Big flavors with minimum effort.


1 box shells pasta, 16 oz.
2 tablespoons unsalted butter
1/4 cup olive oil
4 cloves garlic, minced
1/2 tablespoon white miso paste
1 teaspoon crushed chili flakes
1/2 teaspoon cayenne pepper
1/2 teaspoon sweet paprika
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
20 sage leaves
Sea salt, to taste
Ground black pepper, to taste
Grated parmesan, for serving
1 cup breadcrumbs


  1. Cook the pasta according to package directions until al dente. Drain, reserving 1/2 cup of the pasta water. Return pasta to the pot and set aside.
  2. Bring a large skillet to medium heat, then add butter. Turn heat to low and cook for 2-3 minutes, until butter foams and starts to brown. Add olive oil and garlic, cook for 2 minutes until garlic has softened. Stir in miso paste, then add the chili flakes, cayenne pepper, sweet paprika, smoked paprika, cumin, and sage leaves. Stir together well.
  3. Pour the brown butter spicy miso sauce over the pasta and toss together. Add the reserved pasta water and stir together. Season with sea salt and pepper.
  4. Transfer pasta to serving plates. Sprinkle parmesan and breadcrumbs over top and enjoy!
