Grilled Chicken Caesar Salad

Serves 4 | 
Fresh, highly flavorful and so easy.

Ingredients:

1 lb boneless skinless chicken breast
Kosher salt, to taste
Ground black pepper, to taste
Cooking oil, for the grill
2 romaine hearts
Caesar dressing, your preference
1 cup croutons
2 tablespoons grated parmesan cheese

Directions:

  1. Preheat grill to medium-high heat. Brush grill grates with cooking oil.
  2. Liberally season chicken breast with salt and pepper. Place on the grill and cook between 4-6 minutes per side. Remove from grill and let rest. Once cool enough to touch, cut into thin strips.
  3. Chop up romaine hearts and transfer to a large salad bowl. Add chicken to the bowl and drizzle with Caesar dressing. Toss together until well mixed.
  4. Use salad tongs to transfer salad to four bowls.
  5. Top salads with croutons and grated parmesan cheese.
