Grilled Chicken Caesar Salad

Serves 4 |
Fresh, highly flavorful and so easy.
Ingredients:
1 lb boneless skinless chicken breast |
Kosher salt, to taste |
Ground black pepper, to taste |
Cooking oil, for the grill |
2 romaine hearts |
Caesar dressing, your preference |
1 cup croutons |
2 tablespoons grated parmesan cheese |
Directions:
- Preheat grill to medium-high heat. Brush grill grates with cooking oil.
- Liberally season chicken breast with salt and pepper. Place on the grill and cook between 4-6 minutes per side. Remove from grill and let rest. Once cool enough to touch, cut into thin strips.
- Chop up romaine hearts and transfer to a large salad bowl. Add chicken to the bowl and drizzle with Caesar dressing. Toss together until well mixed.
- Use salad tongs to transfer salad to four bowls.
- Top salads with croutons and grated parmesan cheese.
